Leftovers reimagined- my favorite kind!
Tip: For a heftier portion, top sprinkled tortilla with a second one instead of folding it in half.
If I’ve said it once, I’ve said it a thousand times: we LOVE Tex-Mex. After multiple occasions of having enough leftover fajita mixture for one or two people, I decided to try to stretch it so EVERYONE could enjoy it a second time.
You start by chopping it finely (or use kitchen shears to cut it up with fewer dirty dishes). Then choose your cheese! We always have cheddar on hand, but anything from the “Jack” family or even cojita would be tasty.
Gently fold the quesadilla and place it in a hot pan. Sometimes if I’m feeling fancy, I set a heavy (HEAT RESISTANT) plate on top to make sure everything melts together perfectly.
When one side is finished, flip gently and cook the other side. Keep going till you’ve used up your mixture.
We enjoy ours with sour cream and homemade salsa…but occasionally we’ll add in guacamole.
Another thing you could probably quote me on by now: there are allllllllllll kinds of ways that you can change this up and make it suit your needs.
