BBQ Chicken Pizza

Our BHF version combines two game day favorites: pizza and BBQ…no wonder it’s a favorite of our family and many farm guests! 

BBQ Chicken Pizza

  • 1 pizza crust
  • 1/2 c. BBQ sauce
  • 2 c. shredded cheddar cheese
  • 1/2 c. chicken, cooked and shredded
  • 2 Tbs + 1 tsp BBQ rub
  • Additional toppings: chicken bacon, bacon, diced red onion, pickle relish, etc.
  1. Toss shredded chicken in 2 Tbs rub until well coated.
  2. Place pizza crust on a sheet pan and slather generously with sauce.
  3. Sprinkle cheese over the sauce, followed by seasoned chicken and other toppings. Sprinkle edge of crust with oil and remaining rub.
  4. Bake at 350° until cheese is melted. Broil for an additional 1-2 min before slicing and serving.

Tip: Drizzle hot honey over the pizza before serving for extra sweet heat.

Y’all, this is such a simple dish, perfect for a gathering and ALSO for cleaning up the last bit of roasted chicken or the end of a bottle of BBQ sauce.

We start ours with a home-made sourdough crust because that is Ryan’s preference. He finds it not only tasty, but it helps cut down on his acid reflux (maybe TMI or maybe helpful info if you too suffer from it). If you have a sourdough starter at home, simply take the dough you would use for a 1lb loaf of bread, plop it on a cookie sheet prior to its final rise, spread it out, and par-bake it at 425°. At this point, you can either use it immediately OR wrap it and freeze it for a later date. We eat pizza once a week, so I try to stock my freezer with multiple crusts.

If you don’t do sourdough, never fear! There are a multitude of other options for the base of your pizza from your local grocery store: pre-baked crust, canned pizza crust, fresh pizza dough, and probably other items I’m forgetting.

Once you decided on your crust, collect everything else and you’re ready to roll!

We mixed some leftover breast meat with our house BBQ rub that I keep on hand in the pantry. Then we spread the sauce on the crust and layered on the cheese and toppings; this time we had chicken bacon (A.K.A. chicken skin) to add.

Before baking, we like to drizzle a bit of oil around the outer “exposed” crust and sprinkle a bit more BBQ rub.

We popped the pizza in the oven until the chicken was warm and the cheese was melted (8-10 min). Then we turned on the broiler for a couple minutes to crisp the crust and “bacon.”

When it came out, we drizzled hot honey over the whole thing (love that stuff), cut it into slices, and enjoyed a tasty lunch!

AH! Doesn’t that just look so tasty? I’m getting hungry again!

A couple extra notes:

  • While we traditionally enjoy popcorn with our pizza, this style pairs well with any of your favorite barbeque sides: slaw, baked beans, chips, potato salad, etc. 
  • Although BBQ chicken pizza makes a great main course for lunch or dinner, it also makes a great appetizer or party snack.
