Tomato Pie

When life gives you tomatoes…make tomato pie!

Tomato Pie

  • 1 pie crust
  • 2-3 tomatoes, diced
  • salt, pepper
  • 2 tsp Italian seasoning
  • 1/2 c. mayo
  • 1 c. shredded cheddar cheese
  1. Par-bake the pie crust.
  2. Add the diced tomatoes to the crust and season them.
  3. Combine the mayo and cheese in a small bowl. Spoon the mixture onto the pie and gently spread it over the tomatoes as evenly as possible.
  4. Bake at 350° until the top is golden brown.
  5. Slice and enjoy!

Tip: Add bacon (or chicken bacon) in with the tomatoes for a delicious twist!

This recipe is decidedly southern, thus my mom (a northerner by birth) never made it for me growing up. I also have zero memories of eating this dish at any of my friends’ houses in Mississippi. I have NO IDEA why this recipe came into my life…

BUT I LOVE IT SO MUCH!

So much, in fact, that summer isn’t complete unless I’ve had one (or several)!

It starts with a humble pie crust. Of course, you could purchase one from the store, but you can also make one with four ingredients you probably have in your pantry: 

  • 1 c. flour
  • 1/2 tsp salt
  • 1/4 c. water
  • 1/4 c. oil

 

Combine everything in a bowl, and then press into your pie plate. (This is a super fun job for little people if you have any who want to be involved in your cooking.)

Once your crust is done, just layer in all the goods and bake until golden brown on top.

Doesn’t that just look so amazing? The crust is flaky, the tomatoes are juicy and acidic, the topping is creamy and melty. UGH! I’m going to make one right now!

(JK unfortunately- I’m waiting on some tomatoes to finish ripening.)
